Walk down any coffee aisle and you'll see the same question on every bag: medium or dark? If you've ever stood there wondering what the difference actually is (and which one you'd enjoy more), this guide is for you.
Here's the good news: there's no wrong answer. It mostly comes down to how you like your cup, and how you make it.
What does "roast" actually mean?
Coffee beans start out green. Roasting is what turns them brown and develops all the flavours and aromas we love. The longer and hotter the beans roast, the darker they become, and the more their flavour shifts away from the bean's natural character and toward the taste of the roast itself.
- Medium roast is roasted long enough to bring out sweetness and body, but not so long that the bean's own character disappears.
- Dark roast is roasted longer, until the beans turn a deep brown and the flavour becomes bolder and roastier.
Medium roast: smooth, balanced, easy to love
If you want a cup that's smooth and comforting from the first sip to the last, medium roast is a great place to start.
- Flavour: balanced and rounded, often with notes of caramel, nuts or chocolate
- Body: medium, never heavy
- Brightness: a little more lively than dark roast, without being sharp
- Best for: drip coffee, pour-over, and anyone who drinks their coffee black

Dark roast: bold, rich and full-bodied
If you love a strong, intense cup that stands up to milk and cream, dark roast is probably your match.
- Flavour: bold and roasty, often with notes of dark chocolate and a gentle bittersweet finish
- Body: fuller and heavier on the palate
- Brightness: lower, so it tastes smoother and less tangy
- Best for: French press, espresso-style drinks, lattes, and anyone who adds milk or cream

Does dark roast have more caffeine?
This is one of the most common coffee myths. A bolder taste doesn't mean more caffeine. In reality, the difference between medium and dark roast is small, and depends more on how much coffee you use and how you brew it than on the roast itself. So pick the roast you enjoy the taste of, not the one you think will wake you up faster.
