Fresh Mediterranean Greek Salad with Homemade Greek Vinaigrette

There’s something about Mediterranean food that proves simple ingredients can sometimes make the best meals.
Fresh tomatoes. Crisp cucumber. Salty feta. Kalamata olives. A little red onion. Good olive oil. And plenty of herbs and seasoning.
The Mediterranean diet puts an emphasis on fresh vegetables, minimally processed foods, legumes, whole grains and healthy fats such as olive oil, with cheese, fish and other animal proteins generally enjoyed in more moderate amounts.
This fresh Greek salad is an easy and delicious way to bring a little of that Mediterranean-inspired eating into your kitchen — and the homemade dressing takes only a couple of minutes to prepare.
🥗 Fresh Mediterranean Greek Salad
Serves 4
For the salad
- 3–4 ripe tomatoes, cut into wedges or large chunks
- 1 English cucumber, chopped
- 1 green bell pepper, thinly sliced
- ½ small red onion, thinly sliced
- ¾ cup Kalamata olives
- 150–200 g feta cheese, cubed or crumbled
- A handful of fresh parsley, roughly chopped
- Optional: 1 cup chickpeas, rinsed and drained
I really like the chickpea option since it adds fibre and plant-based protein. Legumes are one of the foods emphasized in Mediterranean-style eating.
🍋 Fresh Greek Vinaigrette
- ¼ cup extra-virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp freshly squeezed lemon juice
- 1 tsp Dijon mustard
- 1 tbsp Les Savoureux Vinaigrette Maker
- 1–2 tsp Les Savoureux Greek Seasoning
- Optional: 1 small garlic clove, finely grated
- Freshly ground black pepper, to taste
Add all of the dressing ingredients to the Les Savoureux Vinaigrette Maker, close the lid and shake until everything is well combined.
Taste and adjust with a little more lemon juice, vinegar or Greek seasoning if desired.
Putting it together
Add the tomatoes, cucumber, bell pepper, red onion, olives and chickpeas (if using) to a large bowl.
Pour over the freshly made vinaigrette and gently toss everything together.
Add the feta and fresh parsley last, giving the salad one final gentle toss so the feta stays mostly intact.
Serve immediately — or let it sit for about 10 minutes before serving to give all those Mediterranean flavours a chance to come together.
🌿 Make it a complete Mediterranean-inspired meal
The salad is wonderful on its own for a light lunch, but you can also serve it alongside grilled chicken, salmon or shrimp, or add chickpeas for an easy vegetarian option.
For something a little heartier, serve it with a piece of whole-grain pita or alongside quinoa or farro. Whole grains, legumes, vegetables and olive oil are all staples of Mediterranean-style eating.
